A rich and hearty Filipino beef stew slow-cooked until fork-tender in a savory tomato and liver sauce with potatoes, carrots, bell peppers, olives, and cheese. This authentic fiesta-style Beef Caldereta is packed with bold flavors and is perfect for family dinners and special occasions.
Ingredients
2.5lbs beef chuck or brisket (cut into 2-inch cubes)
2tbsp cooking oil
salt (to taste)
ground pepper (to taste)
1pc beef bouillon cube
3cups beef broth or water
1bulb onion (large)
8cloves garlic (minced)
1cup tomato sauce
3tbsp tomato paste
1small can liver spread (85 g)
2tbsp soy sauce
1tbsp fish sauce
1tbsp brown sugar
2bay leaves
1tsp paprika
1/2tsp ground black pepper
2medium potatoes, cubed
2medium carrots, cubed
1red bell pepper, sliced
1green bell pepper, sliced
1/2cup green peas
1/4cup grated cheddar cheese
1/4cup sliced green olives
2-3pcs bird's eye chilies (optional)
Instructions

Brown the beef
Season beef with salt and pepper.
Heat oil over medium-high heat.
Brown the beef in batches until nicely caramelized.
Remove and set aside.

Build the base
Using the same pot:
Sauté onion for 3 minutes.
Add garlic and cook until fragrant.
Stir in tomato paste and cook 2 minutes.

Simmer
Return beef to the pot.
Add:
tomato sauce
soy sauce
fish sauce
beef broth
bay leaves
paprika
black pepper
beef cube
Cover and simmer:
2–2½ hours
or 35 minutes in a pressure cooker until fork tender.

Stir in:
liver spread
brown sugar
Simmer 10 minutes.
The sauce should now become thick and glossy.

Meanwhile fry potatoes and carrots until lightly golden.
This keeps them from getting mushy.
Add them into the stew.
Cook another 10 minutes.
