Budbud Bisaya, also called Budbud Pilit, is a beloved Visayan rice delicacy made with sticky glutinous rice slowly cooked in creamy coconut milk, lightly sweetened, wrapped in banana leaves, and steamed until beautifully tender.

Popular in Cebu, Bohol, and other parts of the Visayas, this traditional Filipino kakanin is often served for breakfast or merienda alongside ripe mangoes and hot chocolate made from tablea.

Unlike biko, which is commonly served in a tray, Budbud Bisaya comes in convenient, individually wrapped portions. The banana leaves provide a distinctive fragrance, while coconut milk gives each bite a rich, creamy flavor.

This homemade Budbud Bisaya recipe is easy to prepare using a few simple ingredients and includes an optional budbud tapol variation using purple glutinous rice.

Instructions

  1. 1. Wash and soak the rice. Rinse the glutinous rice two or three times until the water becomes less cloudy. Soak for 30 minutes, then drain thoroughly.
  2. 2. Prepare the banana leaves. Wash and wipe the leaves clean. Briefly warm each piece over low heat or in a dry skillet until pliable. Trim any tough central ribs to prevent tearing.
  3. 3. Heat the coconut milk. In a wide, heavy-bottomed pot, combine coconut milk, sugar, and salt. Heat over medium-low, stirring until the sugar dissolves.
  4. 4. Partially cook the rice. Add the drained glutinous rice. Simmer gently for approximately 25–30 minutes, stirring frequently, until most of the coconut milk is absorbed and the rice is partly cooked. The grains should still have a slightly firm center and the mixture should remain moist enough to shape. Add a little hot water if it becomes dry too early.
  5. 5. Wrap the budbud. Allow the mixture to cool just enough to handle safely. Spoon approximately 3 tablespoons onto each prepared banana leaf. Shape into a short log, roll snugly, and fold both ends inward. Secure with banana leaf strips or kitchen twine.
  6. 6. Steam the wrapped rice. Arrange the rolls seam-side down in a steamer over simmering water. Cover and steam for approximately 35–40 minutes, adding hot water to the steamer as needed.
  7. 7. Check for doneness. Carefully unwrap one roll. The rice should be fully tender and sticky, with no hard or chalky center. If needed, steam another 5–10 minutes.
  8. 8. Rest and serve. Let the rolls rest for 10 minutes before serving. Enjoy warm with fresh mangoes, sikwate, or a light sprinkling of muscovado sugar.

Note

Expert Cooking Tips

  • Use full-fat coconut milk for a rich, creamy texture. Light coconut milk can make the budbud less flavorful.
  • Do not completely cook the rice before wrapping. It should finish cooking during steaming.
  • Keep the mixture moist. Overly dry rice will be difficult to wrap and may remain firm in the center.
  • Soften banana leaves first to prevent cracks and leaks.
  • Wrap snugly but not excessively tightly. The rice needs some room to expand.
  • Steam until fully tender. Use the texture of the center grains, not just the clock, to determine doneness.

Storage and Reheating

Refrigeration: Allow the cooked budbud to cool briefly, then refrigerate the wrapped rolls in a covered, shallow container within 2 hours of cooking, or within 1 hour in very hot conditions. Keep at 40°F (4°C) or below. For best quality, eat within 2–3 days; properly handled rice leftovers are generally kept no longer than 3–4 days.

Freezing: Keep each budbud wrapped in its banana leaf and place the rolls inside an airtight freezer-safe bag or container. Freeze for 1–2 months for best texture. Thaw overnight in the refrigerator before reheating.

Steaming: This is the preferred reheating method. Place refrigerated budbud in a steamer with the banana leaves intact and steam for approximately 8–12 minutes, until the center reaches 165°F (74°C). Frozen rolls may take longer.

Microwave reheating: Remove the banana leaves and transfer the budbud to a microwave-safe plate. Add a few drops of water, cover loosely, and heat in short intervals until thoroughly hot. Let stand briefly before checking the center.

Food safety: Cooked rice may support the growth of Bacillus cereus when held improperly. Cool quickly, refrigerate promptly, and never assume reheating will make rice safe if it has been left out too long.

Ingredient Substitutions and Budbud Tapol Variation

Budbud Tapol (Purple Glutinous Rice Variation)

For a beautiful purple-colored Budbud Bisaya, replace ½ cup of the white glutinous rice with ½ cup black or purple glutinous rice (tapol).

How to prepare Budbud Tapol:

  1. Measure 1½ cups white glutinous rice and ½ cup black or purple glutinous rice.
  2. Rinse the tapol separately and soak it for 6–8 hours or overnight. Soak the white rice separately for 30 minutes.
  3. Drain the tapol and simmer it separately in approximately 1½ cups water for 25–35 minutes, adding water if needed, until the grains begin to soften but are not completely cooked. Drain excess liquid.
  4. Partially cook the soaked white glutinous rice in the coconut milk and sugar mixture as directed in the main recipe.
  5. Fold the partly cooked tapol into the white rice during the final 5 minutes of stovetop cooking.
  6. Wrap the mixture in banana leaves and steam for 35–45 minutes, or until both types of rice are completely tender.

The tapol will give the budbud a naturally purple appearance, slightly nuttier flavor, and pleasantly chewy texture.

Important: Black glutinous rice generally needs more water and cooking time than white pilit. Precooking it separately helps ensure that both varieties finish tender without turning the white rice mushy. Allow extra time for soaking and cooking when making this variation.

Other ingredient substitutes include canned full-fat coconut milk for fresh tuno, dark brown sugar for muscovado, and Thai sweet rice for Filipino pilit.
